Job Purpose
- You would be responsible for providing leadership for the operations of all Food and beverage outlets and services in the hotel.
- You shall ensure that you deliver on the Key Performance Indicators of the food and beverage department.
Main Duties & Responsibilities
- Lead the F&B department to provide quality food and beverage operations as per brand standards.
- Co-ordinate with Executive Chef to supervise and advice on food quality and presentation, especially with breakfast and lunch/dinner buffets.
- Identify customers’ needs and respond proactively to all their concerns.
- Lead F&B team by attracting, recruiting, orienting, training and appraising staff.
- Conduct hygiene and cleanliness inspections in food & beverage outlets on a regular basis.
- Ensure food & beverage outlets are adequately stocked with service utensils, beverage, and wine stocks.
- Maintain effective employee relations with management, supervisors, subordinates, and other departments in the hotel.
- Attend daily restaurant, kitchen & bar briefings and take appropriate actions on emerging operational issues.
- Promote and participate in the maximisation of departmental profitability by achieving approved cost margins for food cost of sales.
- Achieve targets for F&B covers whilst managing cost as stipulated in the budget.
- Control bar and restaurant payroll cost (overtime, casual or contract workers etc)
- Control other expenses such as: service utensils/stores cutlery, grocery and glassware losses and breakages, cleaning and stationery supplies in restaurant and bars.
- Supervise restaurant billing procedures and spot checks on waiter’s compliance.
- Reduce staff pilferage.
- Set goals, targets for restaurants, bars and follow up on progress.
- Guest Relations - ensure a minimum of 90% guest satisfaction is always maintained.
- To ensure that KPIs are met completely and on time.
- Ensure compliance with all health, safety, environmental and legislative requirements (HSE).
- Attend to any other duties as may be assigned by management.
