Job Description

Description

  • Our restaurant is in the heart of Victoria Island, Lagos’s premier hub for luxury and commerce.

  • We are looking to engage a Head Barman.

  • As a head Barman you will be more than just a drink-maker; you will also play the role of a mixologist, a performer, and a manager.

  • In your role, you will make the bar the centerpiece of the restaurant's social scene.

Primary Responsibilities

  • Curate a sophisticated cocktail menu that blends international trends with local Nigerian flavours.

  • Execute complex drinks using advanced techniques like smoking, fat-washing, or house-made infusions with speed and precision.

  • Manage high-value stock, ranging from premium Champagnes to rare Cognacs (X.O. and beyond). Conduct weekly audits to minimize "wastage" or "shrinkage."

  • Supervise and mentor junior bartenders and bar-backs. Create the "rota" (shift schedule) and ensure the team maintains high grooming and service standards.

  • Occupy the "center stage." Build rapport with Lagos’s elite, recognizing the specific preferences of high-profile "regulars" and corporate "Big Men."

  • Ensure that every drink leaving the bar, whether a simple Chapman or a signature Old Fashioned, meets the exact visual and taste standards of the house.

Key Skills & Qualifications

The "VI" Context (Cultural Nuances):

  • The "Showmanship" Factor: In Lagos fine dining, presentation is everything. A Head Barman is expected to provide a visual experience—flair (subtle), elegant glassware, and artisanal ice.

  • Speed vs. Quality: During "Lagos Nightlife" hours (10 PM – 2 AM), the bar can get incredibly busy. You must maintain fine-dining quality while handling high-volume orders.

  • Vendor Relations: In VI, you will often deal directly with brand ambassadors from major distributors (e.g., Pernod Ricard, Moët Hennessy) for activations and exclusive bar takeovers.

Skill Category

Specific Competency for VI, Lagos:

  • Product Knowledge: Expert-level knowledge of Premium Spirits (Hennessy, Macallan, Clase Azul) and Wine/Champagne service.

  • Social Intelligence: Ability to navigate the high-pressure social environment of VI with charisma and "street-smart" professionalism.

  • Financial Literacy: Understanding of "Pour Cost" and gross profit margins to ensure the bar remains a high-revenue center.

  • Certifications: WSET Level 1 or 2 (Wine & Spirits Education Trust) is highly desirable for luxury VI venues.

Compensation & Benefits

  • Base Salary: Typically, N100,000 – N150,000 per month, depending on experience and understanding of the role.
