Job Brief



  • We are a restaurant chain operating in the city of Lagos and are currently seeking to recruit a Head Baker to lead our Central Production Unit.


Responsibilities



  • Ensure that all baked goods, dessert, ice cream and other central production items are prepared in line with given recipes, standards & guidelines.

  • Decorate cakes creatively and beautifully using a variety of icings (butter, cream cheese, chocolate etc.).

  • Responsible for the training and induction of all bakers and central production employees.

  • Responsible for continuous training and development of kitchen staff to ensure quality standards are maintained across all outlets.

  • Scheduling the rota for all Central Production kitchen staff by anticipated business activity and planning adequate cover for absence to ensure the smooth running of operations.

  • Ensure that all equipment are kept clean and in excellent working condition.

  • Ensure that high levels of hygiene and sanitation are maintained in the kitchen.

  • Ensure that all items produced meet the required quality standards.

  • Ensure the compliance of central production staff with laid down policies & procedures.

  • Ensure that all kitchen and production records are properly updated on a timely basis.

  • Responsible for reporting any violations of recipe or baking standards to the HR manager.

  • Proper organisation and storage of raw materials, baked goods, inventory, kitchen utensils, cleaning materials etc. in accordance with HACCP standards.

  • Provide suggestions and recommendations on recipe development and improvement as and when required.

  • Responsible for the overall supervision of the day-to-day operations of the central bakery/kitchen.


Requirements



  • Candidates should possess a minimum of HND certificate or equivalent.

  • A minimum of 5 years of experience in varied kitchen positions including cake baking, bread & pastry making and cake decoration.

  • Proven organisational and leadership skills.

  • Experience in cake decorating with whipped cream, cream cheese and butter icing.

  • Energy & Stamina.
